Chilli Types: Poblano

The master of mild and smoky. The Poblano (Capsicum annuum) is a large, mild pepper (1,000 – 2,000 SHU) with a rich, earthy flavour. Its thick walls make it perfect for roasting and stuffing, as in the classic chiles rellenos. When dried, the Poblano transforms into the dark, wrinkly Ancho chili, a cornerstone of Mexican mole sauces.
