Chilli Types: Scotch Bonnet

The flavour of the Caribbean. Named for its resemblance to a Scottish tam o’ shanter hat, the Scotch Bonnet (Capsicum chinense) is the sweeter, slightly less aggressive cousin of the Habanero. It has a similar heat level (100,000 – 350,000 SHU) but a more pronounced fruity sweetness, making it the soul of jerk marinades, pepper sauces, and countless other island dishes.
